
Raw adjika from green tomatoes
Description
Perfect for the table and with drinks. Adjika made with this recipe will be spicy. You can cut back on the pepper and garlic so it is not as fiery. In our family we like it hot and add adjika to dishes in small amounts. We also cut the tomatoes into large pieces, and this preserve works as a winter salad.

Step 1

Wash the red tomatoes, hot and sweet peppers, and run them through a meat grinder together with peeled garlic. Then add khmeli-suneli, salt, and vegetable oil, and mix everything together.

Wash the green tomatoes and cut them into quarters or halves. Mix them with the mixture from the previous step, place over heat until boiling, then simmer for 20 minutes, stirring.

Add chopped herbs to the almost-finished adjika. Then divide the finished appetizer among the prepared jars and seal them. Taste it after it has cooled completely.
