
Adjika from Green Tomatoes
Description
The recipe won't take much time. This is one of the simplest recipes for making adjika from green tomatoes. The spiciness of the appetizer is very easy to control: the less hot pepper you use, the milder the adjika will be. The finished appetizer can be used as a sauce for meat dishes or side dishes. Wash the tomatoes thoroughly, cut them into quarters, and sprinkle with salt. Set aside for several hours.

Peel and core the apples and peppers, place them in a blender bowl, and blend until smooth. Do the same with the tomatoes. Transfer everything to a large pot and simmer over medium heat for 30 minutes. Then blend the garlic cloves and herbs in the blender. Add to the tomatoes: garlic, herbs, sugar, coriander, salt, and vinegar. Simmer for another 10 minutes.

Spread the adjika into sterilized jars, turn them upside down, and wrap them in a blanket until completely cooled. Store the appetizer in a cool place.
