Step 1

Peel the apples, remove the seeds, and cut into medium-sized pieces. Discard the core. Peel the onion and cut into 4–6 pieces.

Pour 3 liters of juice into a saucepan. Add the apples and chopped onion.

Place the pot on the stove and simmer the contents over low heat until reduced by 50%. After 30 minutes from the start of cooking, you can add spices to the pot. Be sure to use coriander and Italian herbs. For convenience, you can buy a ready-made spice mix for adjika.

When the mixture has reduced, add the sugar and salt to the pot. You may need more sugar or salt than indicated above. Adjust to taste. Let it simmer for about 10 minutes. Blend everything until smooth with an immersion blender.

Add the pressed garlic. Mix well. Divide the mixture among the jars. Seal the jars. This adjika does not require sterilization. Store it in the refrigerator.
