A delicious addition to everyday and festive dishes. This fairly simple recipe for tomato ajika can easily be adjusted to suit your taste, making the condiment spicier or slightly piquant, for example. The amount of garlic, as well as sugar, can also be varied. This is a great alternative to store-bought meat sauces.

    1. The main ingredient of our adjika is tomatoes. Wash them and pat them dry slightly.

    2. Be sure to use sweet pepper when preparing tomato ajika. Without it, the taste and aroma will be completely different.

    3. The amount of chili pepper depends on your taste preferences. If you don't like it too spicy, remove the seeds beforehand, as this will reduce the pepper's heat.

    5. Cut the dried tomatoes into medium-sized slices.

    8. Pour everything into a large saucepan. Bring to a boil, add salt and sugar, reduce the heat to the minimum, and simmer for at least 45–55 minutes. The time depends on the juiciness of the vegetables, as homemade tomato adjika should not be too runny.

    9. After that, it only remains to pour into clean jars. The adjika can be sealed and stored in a cool, dark place, or covered with lids and placed in the refrigerator.
