Adjika from tomato paste

    Wash the bell peppers (you can use peppers of different colors) and remove the seeds, cutting each pepper into several pieces. Pass the peppers through a meat grinder. Alternatively, you can use a blender for grinding.

    Wash the plums and break each fruit into two halves. Remove the pits from the plums. It is better to use unripe fruits and never overripe, soft ones. Chop the plums in the same way as the bell pepper.

    Peel the garlic. Wash and dry the hot pepper. Grind the ingredients in a meat grinder or finely chop them with a sharp knife. If you want the adjika to be spicier, do not remove the seeds from the hot pepper. Add the prepared ingredients together with tomato paste to the ground plums and pepper.

    Place all the ingredients into a saucepan of suitable size and set it on the stove. Add sugar and salt to the saucepan, reduce the heat to the minimum, and cook with the lid closed for about half an hour. At the very end of cooking, add vinegar and mix everything thoroughly.
