Perfect for the table and with drinks. Admit it, this is a very original recipe for making beet adjika for winter! Even the idea itself—making adjika from beets—is already unusual, isn’t it? But personally I love making all sorts of unusual preserves, and this time I definitely didn’t go wrong! It turned out to be a versatile spread—you can spread it on bread, serve it with meat as a sauce, and it works wonderfully as a dressing for first courses (especially borscht)! So I’ll tell you about this simple beet adjika recipe for winter. It can be served warm or chilled.

    1. Grate the carrots on a fine grater and mix with the sugar and salt. Chop the beets in a blender and mix with the vegetable oil. Now let the vegetables stand for 10 minutes.

    2. Mix the carrot and beet mixture in a saucepan or deep skillet. Add half the tomato juice and simmer for 20 minutes over low heat with the lid on.

    3. Now add pressed garlic and chopped peppers. Mix well. Pour in the remaining tomato juice and simmer for another 30 minutes.

    4. When the vegetables have softened, add the bay leaf and vinegar. Taste and, if needed, add more salt or sugar. Remove from the heat and blend everything again in a blender.
