
Adjika from Plums for Winter

Perfect for winter pantry stocks. I really appreciate that this is not only a very original but also a very simple plum adjika recipe for the winter! My vegetarian friend says this tangy, piquant sauce goes wonderfully with boiled beans, but for me, as a meat lover, this homemade plum adjika for the winter will always be remembered as a sauce for meat. So depending on your preferences, I'm sure you'll find a worthy culinary use for this wonderful adjika too.

1. Wash the plums thoroughly and remove all pits and stems. Peel the garlic and separate into cloves. If you do not want the adjika too spicy, remove the white seeds from the peppers.

2. Grind the garlic, plums, and pepper in a meat grinder or blender. Mix thoroughly.

3. Now add the sugar, salt, and tomato paste. Mix well, then set over low heat. Bring to a boil and cook for 20 minutes, stirring constantly.

4. Transfer into pre-prepared jars and seal for winter storage. Until completely cooled, store upside down wrapped in a blanket.
