Plum Ajika

Description

A delicious addition to everyday and festive dishes. Prepare the ingredients: thoroughly wash the plums and vegetables, and remove the pits. Grind the plums, peppers, and onions through a meat grinder. Cook the resulting mixture until thickened. At the end, add pressed garlic, salt, sugar, and spices. The adjika is ready.

    Pit the plums. Remove the seeds from the bell pepper and chili pepper. Don't forget the onion. Add the chili pepper in reasonable amounts—better to add more later if needed.

    Grind everything through a meat grinder. The mixture will be an unusual color, don't be alarmed.

    Cook the resulting mixture over medium heat until thickened. Stir occasionally.

    At the end of cooking, salt the adjika, add sugar and spices. Squeeze in and add garlic. Stirring, bring to readiness.

    Place into sterilized jars and seal. Ajika is ready to serve immediately, but you can also preserve it. The jars won't burst. I simply store them in the cellar. I don't add vinegar to ajika. Nothing explodes. Ajika is cooked for about 30-45 minutes. During this time, everything becomes sterilized.
