
Tomato, Apple, and Pepper Adjika
Description
This adjika has a magnificent sweet-and-spicy flavor. For me, it’s an essential winter preserve. The ingredients for this dish are easy to find, so remember the recipe. Serve with fresh herbs and sauce.

Step 1

Prepare the peppers: wash and cut them (preferably into cubes or strips). Cut each apple into 5–7 pieces. Divide the tomatoes into pieces the same way as the apples, but into four.

Cut the carrots into small pieces. Remove the seeds from the hot pepper and chop it as well. Run all the vegetables through a meat grinder or blend them in a blender until you have a smooth, uniform mixture.

Add butter, salt, and sugar to taste. Simmer the mixture for at least one hour. Then add peeled and chopped garlic, and pour in a little vinegar. Cook for about 15 minutes.

Pour the adjika into sterilized jars and seal with lids.
