
Tomato and Pepper Adjika for Winter
Description
A simple way to prepare ahead. To make adjika, chop all the vegetables however you prefer, then cook them with spices, oil, and vinegar. Done. Store in a cool, dark place.

Let's prepare the vegetables for adjika.

Grind the tomatoes in a blender or meat grinder.

Cut the bell pepper.

Blend in a blender.

Mince the hot pepper and garlic. For the pepper, you only need to trim off the stems.

Combine all the vegetables in a pot, place over heat, and cook for 35 minutes. Stir regularly.

While the adjika is cooking, we'll prepare the salt, sugar, and spices. I used dried dill instead of fresh — there's no difference in taste.

Pour in the oil and vinegar, add the salt, sugar, and spices, and simmer for another 10 minutes.

Pour the finished adjika into sterilized jars and seal with the lids. Turn the jars upside down and leave them until completely cooled. Store in a cool place.
