
Tomato Ajika
Description
Homemade sauce recipe. This preparation method doesn't require cooking—simply blend all ingredients using a blender, or, if you don't have one, pass them through a meat grinder. You can make a sweet version of ajika by reducing the amount of chili and adding apples. Store the ajika in the refrigerator under a tight-fitting lid and serve it for dinner or lunch. Serve the sauce with meat or fish, or use it as a salad dressing.

1. Wash the vegetables, cut the tomatoes into pieces, and chop the bell pepper and chili pepper into pieces (leaving the seeds in the chili).

2. Transfer the peppers and tomatoes to a blender.

3. Grind all ingredients into a homogeneous mass.

4. Pour the contents into a deep bowl. Wash and chop the herbs, then add them to the bowl.

5. Add all the spices to the bowl with the remaining ingredients, except for paprika.

6. Peel the garlic head, place each clove onto a small plate.

7. Pass the garlic cloves through a press or mince them using a grater.

8. To slightly mellow the taste of adjika, add paprika to it, which will give it sweetness.
