
Ajika from pepper and garlic
Description
Homemade sauce is easy and quick to prepare. We'll make this sauce without cooking and with a minimal number of ingredients. All we need is: two types of peppers, garlic, vinegar, sugar, and salt. What could be simpler? This seasoning is definitely worth making in bulk, as it's versatile. It pairs wonderfully with hot meat dishes. The finished sauce can be stored in the refrigerator for several days.

Step 1

Wash the peppers. Slice the red pepper and remove the seeds. You can leave the hot pepper whole for more spiciness, just remove the stems.

Peel the garlic. Slightly crush the cloves using the broad side of a knife. Grind the garlic together with the other vegetables into a paste using a food processor.

In a bowl, mix the mixture with vinegar, sugar, and salt. Then let the future adjika sit for 20 minutes in a warm place. Periodically stir the mixture with a wooden spoon.

Place the finished adjika into sterile jars and cover with lids. You can either can the jars or simply seal them with tight plastic lids. Store the adjika in a cool place.
