
Adjika from Bell Peppers for Winter
Description
Winter preserve made at home. For this recipe you need juicy ripe bell peppers, a few hot peppers, garlic, and fresh herbs. My garlic cloves are small, so I use two; if yours are large, one will be enough. You don’t need much herbs—I add a small bunch. Sterilize the jars and lids for canning in advance. Pour the hot, boiling adjika into the jars, seal them, and wrap them in warmth for 24 hours. The jars keep for up to a year in a cool place.

Prepare bell pepper, hot pepper, garlic, spices, and herbs. Let's begin!

Clean the bell pepper, remove the seeds, and cut it into 4 pieces. For the hot pepper, simply trim off the stems. Peel the garlic.

Using a meat grinder, grind both types of pepper and the garlic.

Pour the mixture into a saucepan, add salt, sugar, and chopped herbs. Do not add vinegar yet.

Boil the adjika for 30 minutes, pour in the vinegar, and remove from the heat. Mix well.

Pack the adjika into sterilized jars.

Screw on sterile lids. Turn upside down and let cool.

After that, it can be stored in the pantry for long-term storage.
