
Adjika from Hot Peppers
Description
One of the best and most piquant appetizers for a festive table is homemade adjika made from hot peppers. The adjika turns out very rich thanks to the sweetness of bell pepper and the heat of hot chili pepper. To keep ajika longer, hold the peppers at room temperature for a few days so they wilt slightly. Then remove the seeds and stems from the peppers.

Coriander or cilantro seeds should be crushed in a mortar.

Add peeled garlic cloves and half the cilantro to the peppers.

Grind the vegetables in a blender.

The consistency should be like purée.

Transfer the mixture to a deep bowl, add salt to taste and the remaining coriander. Mix thoroughly thoroughly.
