
Adjika from Zucchini with Tomato Paste

Prepare the necessary ingredients. Wash the zucchini and peel them.

Cut the zucchini into pieces. Run them through a meat grinder fitted with a fine die. Halve the hot pepper pod, remove the core with the seeds, grind it through the meat grinder as well, and place it on a separate plate.

Add the tomato paste, sugar, and salt to the bowl with the grated zucchini and mix well.

Pour vegetable oil into a saucepan and heat it. Then add the zucchini mixture with tomato paste, salt, and sugar. Simmer over low heat for 30 minutes. Then add ground hot pepper and garlic passed through a press. Simmer for another 10–15 minutes over low heat. Five minutes before the end of cooking, add the vinegar.
