
Adjika from Zucchini and Apples
Description
Perfect for winter preserves. The ajika turns out very tasty. It’s more than zucchini caviar, though ajika has some resemblance to that dish. The preserve is ready for winter storage.

Step 1

Peel the zucchini and remove any large seeds. Cut them into pieces of any size or shape. Peel the bell pepper, tomatoes, carrots, and onion; peel the apples but leave the skin on. Prepare all the vegetables.

Grind everything through a meat grinder.

Put the mixture over heat and cook until it reaches the desired thickness. It took me 30 minutes. Now add salt, sugar, and spices to taste (red hot pepper, khmeli-suneli). Add garlic pressed through a press and a little vinegar. Cook for 1 minute.

Puree the mixture with an immersion blender. Divide among sterilized jars and seal.
