
Feijoa Adjika

Step 1

Wash and peel the feijoas. Process in a food processor until smooth. Then rub through a sieve. Cook the mixture in a heavy-bottomed saucepan until it thickens more. Simmer over low heat, stirring.

Remove the stems from the marjoram, cilantro, and mint and chop them finely. Then add them to the purée and continue cooking.

Cut the red and green bell peppers with scissors. Mince the garlic.

In a mortar, pound the pepper, coriander, and cloves. Add the garlic, peppers, and spices to the pot with the feijoa. Salt. Cook for about 5 minutes, then remove from the heat.

Pour the adjika into prepared sterilized jars and seal with lids.
