
Homemade Adjika with Apples

Winter preserve made at home. This fairly simple homemade ajika recipe with apples is definitely worth noting for lovers of fiery sauces. Its advantage is that you can adjust the heat to taste, and the apples will add not only an interesting flavor note but also aroma. Store in a cool, dark place.

1. First, thoroughly wash and dry all ingredients. Start by peeling the carrots and finely chopping them with a blender, meat grinder, or grater.

2. For apples, tart and firm varieties work best. You may peel them if you like. Mince the apples the same way as the carrots. Use at least 5 medium apples to get the classic homemade apple adjika.

3. Transfer the chopped ingredients to a large pot. Next, add the washed sweet pepper, seeded and chopped in a blender.

4. There is one secret to simmering: the recipe for homemade ajika with apples is similar to making jam—you need to bring everything to a boil, then remove from the heat and let it cool. Then bring it to a boil again. Repeat this process several times until the mixture has thickened slightly.

5. Next, leave the mixture over very low heat for about half an hour. Peel the garlic and hot pepper. To reduce the heat, remove the seeds from the pepper. Grind everything in a meat grinder or blender and add to the pot.

6. Salt to taste. Cook for another 25–30 minutes. Then you can can the adjika in jars, or let it cool and keep it in the refrigerator. It turns out very tasty and quite easy to make.
