Rustic Ajika (meat sauce)

Description

Homemade sauce is easy and quick to prepare. Ajika is very simple to make: just remove the seeds from all the ingredients, cut into small pieces, pass through a meat grinder, and simmer. This sauce can be stored in sterilized jars for about 6 months. Vegetable ajika goes best with meat, fish, and even fried vegetables. Be sure to taste the ajika for salt and spices during cooking. You might want to make it sweeter or saltier. The sauce is ready. Store in the refrigerator and serve with dishes.

    1. Clean all ingredients (tomatoes, sweet and hot peppers, onion, apple, and carrot) from seeds and cut into small pieces.

    2. Pass the chopped vegetables through a meat grinder together with garlic. Transfer the vegetable mixture to a saucepan, add salt, sugar, spices, and herbs. Mix well, bring to a boil, then simmer over low heat for 30 minutes.

    3. Then add vinegar, mix and cook for another 5 minutes. Transfer the adjika to sterilized jars and seal with sterilized lids.
