
Adjika without apples
Description
This adjika is very tasty. The vegetables used thicken the mixture and make the adjika’s flavor richer. As it cools, the adjika thickens and reaches a pleasant consistency. You can serve it with absolutely any hot dishes and sides. It can be served warm or chilled.

Step 1

To prepare adjika without apples, peel the onion and slice it into half-moons. There is no need to finely chop the listed ingredients further. During cooking, the vegetables will stew down and give the adjika thickness, but they will not be noticeable in the finished adjika.

Remove the seeds and stems from the bell peppers. Cut into small pieces. Place in a saucepan.

Pour the prepared vegetables with tomato juice. Add salt, pepper, sugar, oregano, and coriander to taste. Cook for 30 minutes, stirring.

When cooking, pay special attention to the thick sediment at the bottom of the saucepan. Nothing should burn to the bottom.

Using an immersion blender, purée the mixture until smooth. Add 2 to 3 tablespoons of vinegar to the adjika and press 3 to 4 garlic cloves through a garlic press.

Pack the adjika into sterile jars. Seal with lids. You can also skip preserving it: just pack the adjika into clean jars, close with lids, and refrigerate for up to 2 months. If you don't dip dirty spoons into the jars, the adjika keeps very well.
