Adjika without Tomatoes for Winter

Description

A simple way to make a batch ahead. We’ll make tomato-free adjika for winter at home. This appetizer is made from an unusual set of ingredients in that there are no tomatoes here. Store the finished adjika in glass jars, always in a cool place, for example—in a cellar or pantry. Good luck. Serve at the table or keep in the pantry.

    Wash the vegetables thoroughly. Cut the bell pepper and remove the seeds and core. Pass through a meat grinder: bell pepper and hot pepper, peeled garlic, and all the spices.

    Transfer the adjika to a saucepan. Place the pot over low heat. Pour in the vinegar and add the salt. Bring the mixture to a boil, stirring. Then remove the adjika from the heat.

    Pour the ajika into clean glass jars. Seal the jars with lids. Once cooled, store the appetizer in a cool place.
