Eggplant Adjika for Winter

    1. Slice the eggplants. If you're worried about bitterness, you can salt them until they release their juice, then rinse off the salt layer.

    2. Add minced garlic, onion, carrot, and both types of peppers to the tomato juice or puree. Mix well, then pour in the oil. Add sugar and vinegar. Salt to taste. Place on the stove and bring to a boil.

    3. When the adjika comes back to a boil, add the prepared eggplants and, if needed, more spices to taste. Bring to a boil over low heat and cook until the eggplants are tender.

    4. Now spread the mixture into pre-prepared sterile jars and seal for winter storage. Set some aside and eat it as soon as it has cooled.
