
Adjarian khachapuri
Description
Homemade pastries for tea. With this amount of ingredients, I get two large khachapuri. You can also make four smaller khachapuri from the same quantity. In that case, only the number of eggs will increase—instead of two, you'll need four. I highly recommend treating your loved ones—this is very delicious.

Mix the flour, yeast, and salt until uniform.

Melt the butter in the microwave, then add water, cream, and mix. If the mixture is too hot, let it cool down, otherwise the dough will not rise. Combine with dry ingredients in the blender bowl.

Knead the dough until smooth using a food processor.

Leaving the dough in the bowl, cover it with plastic wrap and let it sit in a warm place for 45 minutes. The dough should double in size. Then punch down the dough and let it rise once again.

Divide the dough into 2 equal parts.

Roll out each portion into a flatbread about 20 cm in size.

Grate the cheeses and mix them. Fill the center of the flatbread with half of the cheese mixture, roll the edges into a tube shape, and pinch the edges to seal. It should form a boat-like shape.

Preheat the oven to 220 degrees and bake the khachapuri for 9 minutes. When it turns golden, quickly crack a raw egg into the center and bake for another 5 minutes.
