1. Heat vegetable oil in a cauldron and sauté onions, sliced into half-rings or rings, for about 5 minutes.

2. Wash the beef, dry it, cut into pieces, and add to the onion. Fry for about 10 minutes, stirring occasionally.

3. Meanwhile, peel the eggplants and cut them into small cubes. Salt them, rinse after 5 minutes, and dry. Add the eggplants to the meat with the onion.

4. After about 5 minutes, add the sweet pepper sliced into thin slices.

5. And after another 5 minutes—chopped tomatoes (can be in pieces, peeled).

6. Add chili pepper to taste, salt, spices (coriander is a must!), and garlic.

7. Wash the herbs, dry them, and chop finely. Peel the potatoes, if using.
