Prepare all the ingredients.

Cut the bell pepper, onion, and tomatoes into large slices.

Cut the eggplant into large pieces separately, generously sprinkle with salt, and let sit for 20-30 minutes. Then rinse under cold water and squeeze dry.

Peel the potatoes and cut them into large slices. Fry over high heat until almost cooked. Transfer to a bowl.

In the same oil, fry the eggplant, then after 5-7 minutes add the onion. Fry the onion until translucent.
