Description

Adjapsandali is quite a spicy dish. But that's natural, since it's Georgian cuisine. However, you can adjust the spiciness to your taste. You can add less red chili pepper than specified in the recipe. Adjapsandali differs from European and Turkish versions by the large amount of herbs added (especially cilantro).     1. Prepare all the necessary ingredients.

    2. Wash the eggplants and cut them into cubes, then place them in well-salted water and let sit for 10-20 minutes to remove bitterness. Then drain the water and rinse the eggplants under running water.

    3. Peel the potatoes, cut them into cubes, and add them to the oil in a frying pan with hot pepper. Fry the potatoes for about 5 minutes.
