1. Prepare all the ingredients. Wash and dry the vegetables.

2. Cut the vegetables into pieces, sauté them in vegetable oil, first frying the pepper, onion, and carrots, as well as the eggplants (until golden brown).

3. Now sauté the chopped greens with spices in a separate saucepan. Add to the vegetable mixture.

4. Blanch the tomatoes to remove the skin. Rub the resulting pulp with salt and add it to the vegetables. Reduce the heat and continue simmering. Separately, grind the garlic with cilantro and nuts, then add to the dish.

5. Mix, simmer everything together over low heat for 15 minutes, covered. Add spices to taste.
