
Ajapsandal with meat
Description
The recipe won't take much time. It yields a large number of servings, so you can feed a big family. This is exactly how it was done before: an entire pot was stewed. The dish is slightly spicy, but you can always adjust that to your taste. Cilantro also plays its part, adding freshness and an interesting flavor note. Be sure to check out how to serve it hot.

Rinse the beef and cut it into small pieces.

Wash the eggplants. Cut them into pieces and cover with water. Add salt to the water. Let the vegetables sit for 15 minutes, then drain the water.

Peel and wash the potatoes. Cut them into cubes.

Wash the peppers. Remove the seeds and then slice them.

Wash the basil and cilantro and finely chop.

Chop the washed tomatoes.

Pour 2 tablespoons of oil into a cauldron. Layer the ingredients: beef, eggplants, potatoes, peppers, all the greens and tomatoes. Sprinkle spices and salt on top. Pour oil over the top.

Cover the cauldron with a lid. Place it over low heat. Simmer the dish for 1.5 hours.

Next, lift the lid. Leave the ajika sandal on the heat for another half hour. Let it steep.
