Lazy achma from lavash

Description

Delicious pastry for the whole family. Achkhmu is a fairly popular Georgian dish. The dough can be made from scratch, or you can take the easy way and prepare lazy achkhmu. You can use any cheese, but preferably hard varieties (or suluguni). To make lazy achkhmu with lavash, simply buy ready-made lavash: one large sheet will be enough. So, let's take a look at the recipe. It can be served with tea or coffee.

    1. To prepare achma, take eggs. It's better to use eggs straight from the refrigerator. They whisk quickly and well with a fork, no need to use any equipment. Crack the eggs into a bowl.

    2. To the bowl with beaten eggs, add milk. You can use liquid kefir (1-1.5% fat content), but achma will turn out better and more tender with milk. So, beat the eggs together with the milk.

    3. Grate the suluguni (feta) and hard cheese on a coarse grater. Add to the plate with the eggs.

    4. Grate 2-3 garlic cloves on a fine grater. Add the garlic, salt, and pepper to the bowl with the cheeses. Mix well.

    5. The cheese filling for achma is ready. The mixture should be liquid, but not too runny—about the consistency of thin sour cream. This filling will be spread onto a sheet of lavash. If the filling is too liquid, the achma will turn into mush.

    6. Grease the pan with oil. You can line the bottom and sides with baking paper. Place a sheet of lavash on the bottom of the pan. In my city, I found this round lavash available for sale. If yours is rectangular, it's not a problem. You can bake achma in a rectangular glass dish lined with parchment paper, or in a silicone mold (in which case greasing the mold is unnecessary). Rectangular sheets can be cut into pieces of the desired size and shape.

    7. Place 3-4 tablespoons of filling onto a sheet of lavash. Spread the filling evenly over the lavash, add a layer of cheese mixture, then cover with another sheet of lavash. Add another layer of cheese mixture. Proceed in the same manner as assembling a layered cake with cake layers and cream. The top layer should be the cheese mixture.

    8. Preheat the oven to 200 degrees. Bake the achma in the oven for about 30 minutes. A golden crust will form on the surface of the achma. The achma may puff up in the pan—don't worry. It will settle down once cooled.
