
Apricot Pie with Custard Cream
Description
Delicious baked goods for the whole family. The pie is easy to make. You won't have to knead the dough or roll it out. Any apricots will do, whether fresh or frozen. After baking, let the pie cool well; you can even refrigerate it. Otherwise it will simply fall apart, because the dough is very delicate, and the cream and apricots soak it with liquid. Nevertheless, it is extraordinarily tender and tasty. Sweet custard pairs well with the slightly tart apricots and the crisp crust of the dough. Serve cooled or slightly warm.

Prepare the ingredients for making the pie.

Prepare the pie dough. In a deep dish, pour sugar.

Add sifted flour.

Grate the cold butter and add it to the sugar and flour.

Mix the sugar, flour, and butter with a spoon or mixer until the mixture reaches a crumbly consistency.

Make custard. In a bowl, crack the eggs and add the sugar. Beat well.

Add corn starch.

Mix well again to avoid lumps.

Pour the milk into a heavy-bottomed pot and bring it almost to a boil.

Pour in the mixture of eggs, sugar, and starch. Continuously stir, bringing the cream to a thickened consistency. Then add vanilla sugar.

Place 2/3 of the crumbs in a pan lined with parchment paper.

Spread a little cooled cream onto the crumble.

If the apricots are large, cut them and place them on the cream.

Sprinkle the remaining flour crumbs over the apricots.

Bake the pie in an oven preheated to 175–180 °C. As soon as the top of the pie is browned, it will be ready.
