
Sweet braided buns with poppy seeds and cinnamon

First, sift the flour into a deep bowl. Add sugar (regular and vanilla), a pinch of salt and vanilla extract, dry yeast, and mix everything well.

Add egg yolks to warm milk and lightly whisk. Pour the milk into the flour, add softened butter (to a sour cream-like consistency), and knead a soft dough.

After thoroughly kneading, gather the dough into a ball, brush it with oil, cover with plastic wrap, and place it in a bowl. Put the bowl in a warm place and let the dough rise until it triples in volume.

While the dough is rising, prepare the poppy filling. Grind the poppy seeds in a coffee grinder and mix thoroughly with milk and sugar. Bring the mixture to a boil and simmer over low heat for 4-5 minutes. Let it cool. For the other filling, thoroughly mix cinnamon and sugar.

Knead the risen dough and divide it into pieces the size of a medium egg.

Roll out each piece into an oval-shaped flatbread. Place the poppy seed filling in the center.

Roll the dough into a log. Make cuts along the length almost to the end and braid the pieces together.

Then roll the braid into a circle and shape into buns. For cinnamon buns, first brush the rolled dough with melted butter, then sprinkle with cinnamon, and roll the buns in the same way.

Place the buns on a parchment-lined baking sheet and let them rise. Brush with egg beaten with milk, then bake first with steam at 100 degrees to allow the buns to rise slightly. Then increase the temperature to 200 degrees and bake the buns until fully done.
