
Pizza with cabbage, apples and tomatoes

The flavor will pleasantly surprise you: slightly tart apples pair wonderfully with cabbage, tomatoes, and salty cheese. Moreover, you'll learn how to make a soft and satisfying cottage cheese dough for pizza. I recommend not grating the cheese but cutting it into thin strips and arranging them over the filling in a lattice pattern, so it evenly covers the pizza surface. Serve cooled or slightly warm.

1. Finely chop half a head of white cabbage, place it in a bowl and season with salt. Mix, add lemon juice and let stand for 1 hour.

2. Sift the flour and mix it with the baking powder. In the bowl of a mixer, combine the cottage cheese, egg, vegetable oil, salt, and flour. Knead the dough in the mixer for several minutes.

3. Knead the dough slightly by hand, cover with plastic wrap, and let it rest for 10–15 minutes. Divide the dough into 2 portions, shape into rounds, and roll out each into a thin sheet the size of your future pizza. Transfer onto a baking sheet. Peel the tomatoes and finely chop them.

4. Place them on the dough, then add the cabbage and thinly sliced apples. Arrange the hard cheese, cut into strips, in a lattice pattern. Season the filling with salt and pepper to taste, and add spices.
