Halibut with ginger and Chinese cabbage
Description
This recipe won't take much time. Preheat the oven to 200 degrees. Season the halibut with salt and pepper. In a medium saucepan, bring 2 cups of salted water to a boil. Add quinoa, cover, and simmer until the water is absorbed, about 15 minutes. Remove from heat and set aside. Meanwhile, in a large shallow skillet, heat oil over medium heat. Sear the halibut fillets until golden, 2 to 3 minutes per side. Transfer the fish to an ovenproof dish and bake for 8 to 10 minutes. Add ginger, Chinese cabbage, soybeans, beans, and mushrooms to the skillet. Stir-fry, stirring constantly, for about 3 minutes, until mushrooms begin to soften. Add green tea, soy sauce, and honey. Cook for about 3 minutes. Add onion. Season the quinoa with salt if needed. Divide the vegetable mixture among 4 plates. Top with fish fillets, garnish with basil leaves, and serve with quinoa. Serve hot.
