1. First, prepare all the ingredients. Rinse the beans thoroughly, then soak them in cold water for two or three hours—you can even soak them overnight. However, before cooking, rinse them again and cover with fresh water. Cook over medium heat until tender, about an hour, adding water as needed.

2. Drain the beans in a colander, let the water drain off, then peel and rinse them. Grate the carrot on a coarse grater, and peel the onion and finely chop it.

3. Heat a little oil in a skillet, sauté the carrots and onions in the oil over low heat, stirring, and cook until soft for about 10 minutes.
