Asparagus in tomato sauce

This recipe won't take much time. Asparagus in tomato sauce at home isn't the most popular dish—partly due to its absence in our culinary traditions and local availability, and partly because of its cost. However, the desire to explore new horizons is sometimes stronger than established taste preferences. 1. First, place a pot of water on the stove and bring it to a boil. 2. Meanwhile, wash the asparagus and cut it into pieces. If the ends are too tough, you can peel them. 3. Lightly salt the boiling water and blanch the asparagus for just 3 minutes. Then remove the asparagus and set it aside. You can use this cooking water later for preparing pasta. 4. Pour a little vegetable oil into a frying pan. 5. Peel and finely chop the garlic, add it to the pan, and sauté briefly. 6. Meanwhile, wash the peeled tomatoes and dice them into small cubes. 7. Add the tomatoes to the pan and sauté for about 3 minutes. 8. In a separate small bowl, mix tomato paste, sugar, and a pinch of salt. Add a little warm water and stir thoroughly. Pour this mixture into the frying pan. 9. Add dried or fresh herbs and mix well. Now add the asparagus to the pan and heat through until fully warmed.
