
Mackerel pieces in the oven
Description
The dish is prepared without unnecessary complications. Mackerel is the perfect fish for baking. It has few bones and cooks quickly. You will need a fresh fish fillet, onion (although you can do without it), and juicy tomatoes. I also always add parsley or cilantro—fresh herbs. The finished dish can be served at the table.

Prepare the ingredients.

Wash and clean the fish, cut off the fillets, I try to remove the skin.

Cut the fillet across into 1.5 cm pieces.

Slice the onion into rings or half-rings. Fry in olive oil until golden brown.

In the same pan, fry the fish for just a couple of minutes.

Place the fish in the baking dish, then add the onion on top. Add spices to taste.

Fresh herbs are better than just spices, so add them if possible.

Blanch the tomatoes, remove the skin, and add them to the fish and onion. Add garlic as well. Drizzle everything with olive oil and bake in the oven at 200°C (392°F) for 20 minutes. You can cover with foil, then remove it and bake for another 5 minutes. I've also baked this a couple of times in clay pots.
