Baltic herring in spiced brine

Description

A tasty appetizer for any gathering. Spiced salted herring is perfect for appetizers, open sandwiches, and salads. You can arrange it neatly on a plate and garnish with fresh vegetables. My homemade spiced salted herring tastes much better than store-bought. I recommend cooking even small touches like appetizers at home: it’s both healthier and more delicious. The appetizer is ready. Serve right away.

Instructions

  1. 1

    Step 1

    Step 1

If the fish is frozen, thaw it. Rinse it well. I do not gut the fish, but if you wish, cut off the head, slit along the belly line and gut the fish.

Now we prepare the marinade. Pour one liter of water into a saucepan. Add salt, sugar, bay leaf, black peppercorns, cloves, and coriander seeds. Place over heat and bring to a boil. Then the marinade must be cooled. Do not pour it over the fish while hot—it will spoil.

    Step 3

Pour the marinade over the herring so that it covers the fish completely. Cover with a lid and weigh it down. The weight doesn’t need to be very heavy. Leave the herring like this for 12–15 hours.

Then transfer it to a more convenient container, for example a plastic one, and place it in the refrigerator. The spiced salted salaka is ready.
